About Us
Maggioni grew up in Lecco, a small Italian town at the base of Lake Como. His passion for cooking came from his mother, Ileana, who would start in the wee hours of the morning to prepare for the huge lunches and dinners served at their farmhouse. Every meal was different, and almost everything she made came from the vast family farm. Nicola easily fell in line doing chores on the farm, and helping out in the kitchen.
Food is culture, that’s one of the reasons he fusion travel, food and culture in order to learn all about customs connected to roots and customs. In many cultures food and cooking mean staying together, and that’s another reason why he fell in love with cooking.
At the age of 14, Maggioni went off to the professional chef program at the prestigious IPAS, Cooking & Hotel Management School in San Pellegrino Terme, graduating when he was only 17. He then went on to work in several kitchens, in summer at the Hotel Ollastu in Sardinia, and in winter at Restaurant Salastrains in St. Moritz, Switzerland.
To broaden his horizons, the young chef with the strong work ethic continued to seek employment in various cities. The back of the house is a minefield of opportunities, and vendors are eager to tell of openings at other restaurants and in other cities. This resulted in his doing a stint in Switzerland, Germany, Bermuda, followed by Dublin, New Jersey, New York, Colorado, and finally Connecticut where he has his little paradise
